Try making these chicken drums of heaven at home like you would at a restaurant. As long as you like Indian and Chinese food, you should try this! Chicken drums of heaven are basically fried chicken lollipops that have been marinating and then tossed in a spicy sauce that is very tasty. It tastes great, and each bite is packed with different flavors.

When I was in India seven years ago, I ate Drums of Heaven at a restaurant called Mirror in Mayur Vihar. I haven’t been there in two years, but the drums of heaven are so tasty that I’ve never had them anywhere else.

Ingredients:

The ingredients for this dish are very simple and easy to find.

Chicken– Use chicken lollipop pieces that are fresh.

Ginger, garlic & chilies– The ginger-garlic paste makes this chicken taste and smell even better. Small pieces of ginger, garlic, and green pepper in the sauce give each bite a little crunch and a flavor boost.

Sauces– Soy sauce, green pepper sauce, ketchup, and Chinese sauce. (I used dark soy sauce, but you can use light too)

Cornflour– Any kind of cornstarch or cornflour will work. 1/4 cup of water mixed with 1 tablespoon of cornflour makes a slurry. This mix makes the sauce thicker and glossier.

Other– A whole-grain flour and an egg white.

How to Make Chicken Drums of Heaven at Home:

Frying chicken lollipops:

Salt, soy sauce, Kashmiri red chili powder, or paprika should be mixed into the 1/2 kg of chicken lollipops. Mix it up and let it sit for 30 minutes.

(Note– If you don’t have Kashmiri red chili powder, you can use regular red chili powder instead. Just make sure to use less of it because Kashmiri red chili powder is less spicy and gives the chicken sauce its red color.)

After 30 minutes, add whole wheat flour, cornstarch, and one egg white to the same bowl. The marinade should be mixed well and spread out over the chicken lollipops.

A medium-low heat should be used to cook it for 5 to 7 minutes, or until it turns golden brown. Make holes in the chicken with a fork or knife to see if it’s done. Check that the chicken is golden, crispy, and just a little brown. After it’s been fried, put it on a cooking paper towel to soak up the extra oil.

(Note– You can fry the chicken again if it’s not crispy.)

Drums of heaven sauce:

Add canola oil or refined oil to a wok or kadhai. Then add the chopped garlic, ginger, and green chili. Use a chopper to cut it up very small, like you would ginger, garlic, or green chili. After two minutes of stirring, add the tomato ketchup, green chili sauce, schezwan sauce, and soy sauce. Combine it well.

(Note– You can use schezwan sauce from the store or make it yourself.)

Then add salt and a mix of cornflour and water. Add the fried chicken to the sauce and mix it well. Add more sauce and mix it in so that it’s well mixed.

Add chopped spring onion or cilantro leaves on top of it. Serve it hot and right away.

Tips:

  • You should prepare it for at least 30 minutes. If you have time, you can do it overnight in the fridge.
  • You can use paprika instead of Kashmiri red pepper powder if you don’t have it. You can cut the amount of red chili powder in half and add a little red food coloring if you don’t have both.
  • You can use rice flour instead of all-purpose flour, which is also called maida in Hindi.
  • Do not fry the chicken over a high or low heat. If you do, the inside may become soft or not cooked. Fry it in oil that is between low and medium heat.
  • You can change how much sauce you use based on your preference.
  • If you want, you can add onions or pepper to the sauce.
